 Adobo Steak with Polenta


Adobo a dish from Spain called Adobo Con Cerdero (Lamb Adobo) was introduced in the Philippines by the Galleon trade thru Mexico.

Adobo is a native process melded to a Spanish name. In Spanish, however, adobo is the process and adobado is the dish. In the Philippines, the terms have been reversed: adobado is the process, adobo the dish, such that mole crickets, wild ducks, shellfish and leafy vegetables, are all said to be adobado when they are stewed in vinegar and garlic.
