Grilled Chicken Inasal

Commonly known as Inasal is chicken marinated in a mixture of lime, pepper, vinegar and annato then grilled over hot coals while basted with the marinate. It is served with rice, vinegar (*Sinamak or white vinegar) and soy sauce. It's origin is from the southern Philippines-Bacolod City, Negros Occidental.


*Sinamak Vinegar- Palm vinegar infused with lots of garlic, chili peppers and langkawas(Greater galangal, a kind of ginger)
